This buttery, mouthwatering rustic apple cinnamon galette is magically vegan, whole grain, and free of refined sugar and oil! It takes only minutes to prepare and is perfect for any occasion. Thanksgiving? Apple cinnamon galette. Rosh Hashanah? Apple cinnamon galette. Sunday brunch? Apple cinnamon galette. Wednesday breakfast? APPLE. CINNAMON. GALETTE.

You will be shocked how delicious and full of flavor this is without many of the typical pie ingredients. In fact, it’s so good that my brother asked me to make it for his birthday!
You can also make this without any added sweetener at all. You heard that right. Our society has become so accustomed to sweetening everything that we’ve forgotten that fruit is already sweet! Then once you bake it, all that amazing natural sweetness condenses and becomes even sweeter. However, if you just gotta have that extra sweetness, a little date sugar goes a long way, and is darn nutritious to boot.
Bonus – this gorgeous galette freezes wonderfully!
Rosh Hashanah
Rosh Hashanah – the Jewish new year – is celebrated with a number of symbolic foods, including apples dipped in honey to symbolize and usher in a sweet new year. For a holiday where apples are a pretty big star, why have I never seen an apple pie at a single Rosh Hashanah celebration? Except, of course, on my own table! Let’s change that!
Note that my crust uses nuts, which some people avoid during Rosh Hashanah for symbolic reasons. Our rabbinic authority says it’s fine if the nuts are ground up/blended/not recognizable. That said, I have done recipes like this successfully with hemp seeds and sunflower seeds, too! Don’t be scared to try it out.
Equipment
A really good food processor makes a big difference in this recipe. The cashews need to be ground pretty finely to make the perfect buttery crust. Many machines struggle to grind anything very finely. I wholeheartedly adore my Cuisinart food processor, which is just an absolute beast in the kitchen and can last you literally decades! My mom had hers for over 20 years (actually it still works, just needs a new blade), and I’ve had mine for eight years!
Ingredients
Unroasted cashews – For that shockingly buttery taste
Whole wheat flour – for heartiness
Apples – for juicy fruity flavor and texture
Date sugar (optional) – for a little extra sweetness
Freshly squeezed lemon juice – for added tartness and to enhance the other flavors
Ground Cinnamon – for a little spice
Salt –Â to bring out the other flavors
FYI, I have done this successfully many times with varying gluten-free flours. Feel free to try it out!
Instructions
First, preheat your oven to 350 degrees Fahrenheit. Then cut a piece of parchment paper to fit a standard baking sheet.
Next, in your food processor, grind your cashews, flour, and 1/2 teaspoon salt as finely as you can. Then slowly drizzle water about one tablespoon at a time into the ground mixture while pulsing the food processor in very quick, staccato pulses until you have a soft, crumbly mixture that can be nicely pressed into a dough.
Now it’s time to shape your crust by rolling it into a circle with a diameter a little smaller than the width of your parchment paper.
For the filling, slice 3 medium apples about 1/8 inch thick, then toss them with optional date sugar, lemon juice, a pinch of salt, and cinnamon.
Arrange the apple filling mixture on your pie dough, leaving a border about two inches all the way around.Â
Finally, fold the border over the fruit to complete your galette shape. This can be imperfect – it adds to the charming rustic aesthetic!
Now get to baking! Pop it in the oven for 45 minutes or until lightly browned.
Look at that crust!
Slice that baby and enjoy with some cashew ice cream or vegan yogurt!
