Let me start by saying that I have to serve myself a double portion of this pudding every time I want some because my almost 3-year-old tries to eat all of it. It’s really good. Creamy, a little fruity, light, a hint of sweetness, soooooo nutritious, and doesn’t taste at all like cauliflower. Oh. Well I guess the cat’s out of the bag now.
I know. I was skeptical too. But now I’m making this stuff in bulk.
Seriously, if you could have vegetables for breakfast without noticing it, wouldn’t you want to?

Secret Ingredient Breakfast Pudding
This comforting and secretly veggie-packed breakfast pudding is a seriously healthy alternative to your regular breakfast routine.
Ingredients
- 1 cup cauliflower rice I used trader Joe's brand
- 1 cup unsweetened applesauce
- 2-4 teaspoons almond butter
- 4 tablespoons unsweetened nondairy milk
- 1/2 teaspoon vanilla optional
- Teensy pinch of salt optional
- Date syrup to sweeten if you want but I love it as is with bananas and other fruit.
Instructions
- Steam your raw cauliflower rice until soft but not mushy. (If you're ricing your own cauliflower, don't try to steam whole cauliflower first and then rice it, as it affects the flavor and texture for the worse.)
- Cool a bit (or completely), then mix thoroughly with other ingredients.
- Add fresh fruit, nuts, nut butter, raisins, cacao nibs, cinnamon, or whatever else you fancy. Personally I think it's amazing and super rich with banana slices.
- Prepare for shock. Eat. Experience shock.
