Who doesn’t love a little sweetness with some bite and a whole lotta freshness? Nobody. That’s who. I love adding an unusual ingredient like grapes to a salad, and then savoring it while wondering, how have I never seen this ingredient in a salad before? They give such a pleasant burst of juicy flavor. And paired with the tanginess from the dressing and onion, it’s a combo made in heaven.
To be totally honest, I have been hesitating to share this because the photo just doesn’t do it justice. But the salad is SO GOOD. So I decided to share this now and then hopefully again when I have a better photo
Kale Grape Salad with Raspberry Vinaigrette
Ingredients
Salad
- 2 big handfuls baby kale
- Half a cup of halved grapes
- 1/4 cup raw walnuts
- 1/8 of a small red onion
Blended Dressing
- A cup of frozen raspberries
- Half cup balsamic vinegar
- 2 tablespoons of almond butter
- 1 tablespoon of date syrup
- Half teaspoon of salt
Instructions
- Combine dressing ingredients in blender and blend until VERY SMOOTH.
- Assemble salad ingredients with as much dressing as you like, saving the rest for later.
- Enjoy!
