Kale Grape Salad with Raspberry Vinaigrette

Ingredients
  

Salad
  • 2 big handfuls baby kale
  • Half a cup of halved grapes
  • 1/4 cup raw walnuts
  • 1/8 of a small red onion
Blended Dressing
  • A cup of frozen raspberries
  • Half cup balsamic vinegar
  • 2 tablespoons of almond butter
  • 1 tablespoon of date syrup
  • Half teaspoon of salt

Method
 

  1. Combine dressing ingredients in blender and blend until VERY SMOOTH.
  2. Assemble salad ingredients with as much dressing as you like, saving the rest for later.
  3. Enjoy!

Notes

The dressing recipe makes more than a cup of dressing, so keep it in the fridge and use as needed.
