Hadn’t had this ultimate veggie-packed comfort food in so long, but I assure you the reunion was sweet (figuratively, of course). Especially because there were practically zero ingredients in this. I’m sure by now you’ve heard of cauliflower Alfredo sauce, but have you tried it? If not, take the plunge. You would never know there’s cauliflower in there, and neither will your kids. Just tastes like creamy goodness. And as always, very simple to whip up.
Simplest Ever Cauliflower Alfredo Pasta
This lightened up classic Italian dish contains only minimal ingredients and is sure to please.
Ingredients
- 1 package of pasta we use brown rice-quinoa pasta from Trader Joe's
- 1/2 head of cauliflower
- 1 tablespoon raw almond butter
- Salt pepper, and (optional) hot sauce to taste
Instructions
- Boil cauliflower until soft.
- Drain soft cooked cauliflower and puree in food processor or blender.
- Separately, boil pasta until ALMOST al dente.
- Drain pasta and return to pot on stove.
- On low flame, mix all ingredients until well incorporated. Taste and adjust if necessary but DON'T overmix or it could break the pasta pieces.
