Easiest vegan mac n cheese ever! Only 1 pot, 5 ingredients, and 10 min (once water is boiling). Very slight Mexican flavor, which is awesome. This is our family’s go-to healthy comfort food in a pinch since we usually have all the necessities on hand already. If you want, go crazy and add some veggies like mushrooms, greens, zucchini, peppers, onions…or don’t. Either way, you can’t go wrong.
Mexican Mac 'n' Cheese
This creamy comfort food is perfect when short on time and ingredients.
Ingredients
- 1 bag Trader Joe's brown rice quinoa pasta
- 1/4 cup raw almond butter
- 1/2 cup salsa
- 2 teaspoons white vinegar
- Salt to taste start with a teaspoon
Instructions
- Boil pasta for about 5 minutes until not quite al dente, then drain, leaving about a quarter cup of the pasta water.
- Stir in remaining ingredients while flame is low until creamy, dreamy, and cooked all the way through. Be careful and do NOT overcook as it quickly gets too soft.
- Adjust seasoning if necessary.
- Demolish.
- Cry that it's over.
