Mexican Mac 'n' Cheese

This creamy comfort food is perfect when short on time and ingredients.

Ingredients
  

  • 1 bag Trader Joe's brown rice quinoa pasta
  • 1/4 cup raw almond butter
  • 1/2 cup salsa
  • 2 teaspoons white vinegar
  • Salt to taste start with a teaspoon

Method
 

  1. Boil pasta for about 5 minutes until not quite al dente, then drain, leaving about a quarter cup of the pasta water.
  2. Stir in remaining ingredients while flame is low until creamy, dreamy, and cooked all the way through. Be careful and do NOT overcook as it quickly gets too soft.
  3. Adjust seasoning if necessary.
  4. Demolish.
  5. Cry that it's over.
