Fabulous 5-Minute Fauxgurt

When you want that creamy yogurt goodness but don’t want the sugary stuff with the foil lid and don’t have time to ferment your own…fauxgurt will be your BFF. My toddler (who calls it “logut”) is OBSESSED with it right now, which is pretty great, since it’s nutritious and easily modified to fit the taste of the day, or the contents of your kitchen. All you have to do is dump into the blender and blend until it’s super creamy.

Of course you can customize by adding your favorite toppings (chopped fruit, hemp seeds, cacao nibs, peanut butter drizzle, golden raisins – I’m looking at you). You can also really go wild with your own flavors blended in, too! Add a little lime zest, or some coffee granules, and BOOM – you’ve got a whole new flavor. The possibilities are endless.

One great thing about fauxgurt is its versatility. Eat it on its own, make a gorgeous parfait, use a few tablespoons for some creaminess in a salad dressing, or, my personal favorite, heap some onto a handful of cabbage with some fruit and nuts, and have yourself an insanely nutritious breakfast salad!

Ingredients Method

Ingredients
  

  • 1 block sprouted extra-firm tofu (really any block of tofu will work it just might make the fauxgurt a little thicker or thinner
  • Juice of 2 lemons about 6 tablespoons
  • 2 large very ripe bananas it's ok if they're a little overripe, and a little less ripe is fine, too, but the fauxgurt won't be as sweet
  • Optional: 1 tablespoon vanilla extract
  • Optional: 1/16 teaspoon of salt

Method
 

  1. Put all ingredients in the blender and blend until completely smooth and creamy.
  2. Enjoy immediately, or chill first.

    I absolutely love this recipe!!! Rather then buy store bought coconut yogurt/vegan that’s full of chemicals and sugar. This recipe is creamy, thick, simple,and nutritious.
    Shana is so brilliant on how she constructs these recipes together that have that healthy mom, yet busy mom in mind.
