Got the lunchtime indecision blues? Try this super simple yet super scrumptious salad! Lots of great flavors and textures with only a few ingredients. I love to roast my chickpeas, but you can definitely skip that step if you’re short on time or just plain not into it.

Easy Tahini Romaine Salad
This quick salad will fill you up when lunch needs to happen FAST!
Ingredients
Salad
- 2 large handfuls chopped romaine lettuce
- 1/4 avocado sliced
- 1/2 can chickpeas*
- Salt and pepper to taste
Dressing (makes 1 cup, enough for about 4 salads)
- 1/2 cup tahina sesame paste, NOT the prepared tahini dressing with added ingredients
- 1/2 cup water
- 1 teaspoon salt
Instructions
- Preheat oven to 400 degrees. (Skip this if you don't care to roast your chickpeas.)
- Line baking sheet with parchment paper.
- Arrange chickpeas on parchment paper and add salt and pepper to taste.
- Roast for 30-40 min or until becoming crispy. Best to stir halfway.
- In the meantime, stir or shake dressing ingredients until thick, creamy, and well combined.
- Combine all salad ingredients with about 1/4 cup dressing.
- Enjoy!
Notes
*You don't have to roast your chickpeas, but I prefer the texture that way.
This can also serve 4 as a side salad.
