I don’t care what you say; you will never stop me from adding vegetables to my breakfast. For example, one of my absolute favorite breakfast concoctions is homemade “fauxgurt.” Tastes so much like regular yogurt, but without any of the dairy! And when you blend in a whole bunch of fresh kale – voila! – it becomes Green Monster Fauxgurt!
Like any yogurt, this fauxgurt is super versatile. It can be enjoyed on its own, or you could add some homemade granola (try this one!), or you can do what I do many, many mornings, which is make a crazy breakfast salad with fauxgurt, cabbage or lettuce, whatever fruits I have on hand, and a drizzle of nut butter.
I know that last combo might seem strange to you, but how strange is it, really? We eat salads with fruit all the time, and most lettuces/cabbages have a pretty mild and slightly sweet flavor that works just perfectly with sweeter, fruitier flavors. And if you love mixing up a bunch of textures like I do, this will really do it for you. Flavor aside, it is an amazing way to get even more nutritional value into your day. Give it a shot! You won’t be disappointed.
Green Monster "Fauxgurt"
Ingredients
- 1 pack tofu I prefer firm or extra firm
- 3 large handfuls raw kale
- 3 ripe bananas
- 2-3 tablespoons vinegar or lemon juice
- 1/2 teaspoon of vanilla optional
Instructions
- Put all ingredients into the blender and blend until EXTREMELY smooth and creamy.
