The grapefruit is one of the most underrated foods out there. We see recipes with lemons and oranges all the time, but what about the magnificent grapefruit? This tangy, vibrant salad really highlights the grapefruit in all its glory.
I just love the simplicity of this salad. Paired wonderfully with a perfect avocado and tossed with only some fresh lime juice, all the individual flavors can really pop. Of course, an orange would work here, too, but let’s give the grapefruit its deserved moment in the…limelight. (See what I did there?)
Grapefruit Romaine Salad with Roasted Chickpeas and Lime
Get your citrus kick in this refreshing and satisfying salad.
Ingredients
- 1 very large handful chopped Romaine lettuce
- 1/2 small avocado sliced
- 1 grapefruit peeled and segmented*
- 3 tablespoons chopped walnuts
- Juice of 1/2 lime
- 1/2 can chickpeas ** drained
- Chili powder
- Garlic powder
- Onion powder
- Salt
- Pepper
Instructions
- Preheat oven to 400 degrees.
- Line baking sheet with parchment paper and arrange your chickpeas on it.
- Season chickpeas lightly to taste with chili powder, garlic powder, onion powder, salt, and pepper.
- Bake for 30 minutes or until browning and getting crispy.
- Toss all ingredients in your favorite bowl or plate, seasoning the whole salad with extra salt and pepper to taste. Enjoy!
Notes
*Make sure to remove all the skin, pith, and seeds from each grapefruit segment to avoid any bitterness.
