Why sneaky? 1. Because you won’t be able to stop sneaking extra slices. It’s almost too good. 2. Because of its crazy healthy yet totally undetectable secret ingredient…cauliflower! Not just a little. Two cups! I know most of you won’t believe me. But it is getting rave reviews even from self-proclaimed healthy-food haters.I shaped this into a pie crust, but you could do it in a square baking dish to make traditional lemon bars. BTW, the filling is pink because it’s sweetened with date syrup. (Note: I no longer use date syrup but imagine replacing it with dates would yield a similar result.) Don’t freak. Unless it’s in a good way.

Sneaky Lemon Bar Pie
Ingredients
Crust
- 1 cup whole wheat or gf flour
- 1 cup raw cashew pieces
- 2 1/2 tablespoons date sugar
- 1/3 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 c water only add tablespoon by tablespoon
Filling
- 1/4 cup nondairy milk
- 1/4 cup raw cashew pieces
- 2 cups cooked cauliflower
- 3/8 cup date syrup
- 1/2 cup fresh-squeezed lemon juice
- Zest from one lemon
- 3 tablespoons tapioca flour
Instructions
- Preheat oven to 375F.
- Grind the dry crust ingredients in the food processor til very fine, then slowly drizzle water while pulsing food processor until you have a soft, pliable dough. If the dough breaks apart at the edges when you handle it, break it until little pieces, put back into food processor, and add a little more water.
- Flatten dough and place between two pieces of parchment paper. Roll out circle large enough for pie dish. I flip my pie dish over onto the rolled dough and use it as a stencil to cut the dough the right size and shape. Gently press dough into dish.
- Blend all filling ingredients on high until smooth and creamy. Pour into the crust.
- Shape edges of crust however you like them, then cover the exposed edges with foil so they don't burn.
- Bake for 40 minutes at 375F.
- Cool then chill overnight.
- Slice, serve with fresh strawberries, and enjoy! Keep in the fridge.
