Quick Spring Lunch Salad

I have simply not been interested in eating vegetables the last week or so. I forced myself for lunch and was pleasantly surprised. I honestly just threw together whatever was already around and luckily it worked. I always feel like I need to come up with something new and innovative in order to enjoy it, but that’s just not true. Simple is great. My almost-3-year-old who shared this with me agreed.

Quick Spring Lunch Salad

This simple and yummy lunch salad will fill you up without filling you out!

Cuisine raw, Vegan
Servings 1 serving

Ingredients
  

  • 2 big handfuls spring mix
  • 1 cup white beans
  • 3 tablespoons raw walnuts
  • 1 tiny avocado sliced
  • Juice of 1 lemon
  • 2 frozen Dorot brand basil cubes
  • Garlic powder red chili flakes, black pepper, and salt to taste

Instructions
 

  • Combine spring mix, beans, walnuts, avocado, and seasoning.
  • Separately, combine lemon juice and basil until well incorporated.
  • Thoroughly mix dressing into salad and enjoy!
