Healthiest Vanilla Cinnamon Granola

Just sweet enough, super versatile, and comes together faster than you can say "Uuuuugh I am like sooo in the mood for granola right now!"

Ingredients
  

  • Ingredients:
  • 2 cups old fashioned oats
  • 1/4 cup date sugar or other dry sweetener or omit
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 6 tablespoons water
  • 1/3 teaspoon salt
  • Optional:
  • 1/4 c toasted slivered almonds or other nut
  • 2 tablespoons raisins or other dried fruit

Method
 

  1. Preheat oven to 350 degrees farenheit.
  2. Thoroughly mix all dry ingredients except for nuts and raisins.
  3. Separately, mix all wet ingredients, then combine with dry ingredients.
  4. Spread as flat as possible on a parchment-paper-lined baking sheet.
  5. Bake at 350f for 20 min, stirring halfway through.
  6. Let cool completely. Mix with optional nuts and raisins. Enjoy as is, or as cereal with nondairy milk, or as a topping for fauxgurt or baked fruit, or take a little baggie of it as a snack for your little ones (or yourself)...lots of options!
