Mexican Mac 'n' Cheese

Ingredients
  

  • 1 bag Trader Joe's brown rice quinoa pasta
  • 1/4 cup raw almond butter
  • 1/2 cup salsa
  • 2 teaspoons white vinegar
  • Salt to taste start with a teaspoon

Instructions
 

  • Boil pasta for about 5 minutes until not quite al dente, then drain, leaving about a quarter cup of the pasta water.
  • Stir in remaining ingredients while flame is low until creamy, dreamy, and cooked all the way through. Be careful and do NOT overcook as it quickly gets too soft.
  • Adjust seasoning if necessary.
  • Demolish.
  • Cry that it's over.
