Simplest Ever Cauliflower Alfredo Pasta

This lightened up classic Italian dish contains only minimal ingredients and is sure to please.

Ingredients
  

  • 1 package of pasta we use brown rice-quinoa pasta from Trader Joe's
  • 1/2 head of cauliflower
  • 1 tablespoon raw almond butter
  • Salt pepper, and (optional) hot sauce to taste

Instructions
 

  • Boil cauliflower until soft.
  • Drain soft cooked cauliflower and puree in food processor or blender.
  • Separately, boil pasta until ALMOST al dente.
  • Drain pasta and return to pot on stove.
  • On low flame, mix all ingredients until well incorporated. Taste and adjust if necessary but DON'T overmix or it could break the pasta pieces.
