Fabulous 5-Minute Fauxgurt

- 1 block sprouted extra-firm tofu (really any block of tofu will work it just might make the fauxgurt a little thicker or thinner
- Juice of 2 lemons about 6 tablespoons
- 2 large very ripe bananas it's ok if they're a little overripe, and a little less ripe is fine, too, but the fauxgurt won't be as sweet
- Optional: 1 tablespoon vanilla extract
- Optional: 1/16 teaspoon of salt
Put all ingredients in the blender and blend until completely smooth and creamy.
Enjoy immediately, or chill first.
