Grapefruit Romaine Salad with Roasted Chickpeas and Lime

Ingredients
  

  • 1 very large handful chopped Romaine lettuce
  • 1/2 small avocado sliced
  • 1 grapefruit peeled and segmented*
  • 3 tablespoons chopped walnuts
  • Juice of 1/2 lime
  • 1/2 can chickpeas ** drained
  • Chili powder
  • Garlic powder
  • Onion powder
  • Salt
  • Pepper

Instructions
 

  • Preheat oven to 400 degrees.
  • Line baking sheet with parchment paper and arrange your chickpeas on it.
  • Season chickpeas lightly to taste with chili powder, garlic powder, onion powder, salt, and pepper.
  • Bake for 30 minutes or until browning and getting crispy.
  • Toss all ingredients in your favorite bowl or plate, seasoning the whole salad with extra salt and pepper to taste. Enjoy!

Notes

*Make sure to remove all the skin, pith, and seeds from each grapefruit segment to avoid any bitterness.
**You can skip the roasting step if you are rushing.
